Soup recipe for tapioca

Tapioca isn't just for pudding. Tapioca can be used to thicken soups and since it is high in Potassium, Magnesium and Calcium, it is a healthy addition. Buy the small pearl tapioca. The simpliest way to add the tapioca is to make your soup and add the tapioca to the last five to ten minutes of cooking. You can add about 1/2 cup of tapioca to every 5 cups of soup broth. If your soup is thicker than broth, you should precook the tapioca and then add them to the soup. To precook the tapioca fill a pot of slightly salted water - 3 cups water to 1 cup of tapioca. Boil the water and then add the tapioca. Boil until tapioca is translucent and  have an al dente texture. Drain and add to the soup.
